Leavin' on a jet plane......
Well, I am lucky enough to be heading out to California today w/ a few of my good friends. I'm so excited to go. My friend Tiffany's mom gets a beach house there every summer....& has invited us to come stay for a few days. We are flying out today, and will be back on Saturday.
Curtis says it's good timing for me to be getting away, because I'm grumpy all the time about my house being in shambles from packing boxes, and getting ready to move. :)
You would think since I'm planning to be on the beach for the next few days, I would have been watching what I eat.....ummmm, I tried last week, but then this morning, I had a big brownie with vanilla ice cream, and caramel on top for breakfast! Washed down with a diet coke of course. :)

Anyway, I will miss you all...I feel I'm back in the blogging zone, and want to update more often. Tiffy is bringing her laptop, so maybe I'll try to be as good as Debbie, and actually blog while on vacation.
I wanted to leave you with a really yummy recipe I made for dinner the other night. Debbie asked for some easy recipes, so I thought I would post it here so you would all get it. My family loved this....not one drop left.
It's a soup that they have at Olive Garden.
Zuppa Toscana:
1 lb. Italian Sausage ( i used Jimmy Dean)
1tsp. crushed red pepper
1/2 lb. bacon, cooked & crumbled (important to cook BEFORE you add to soup)
1 yellow onion chopped
2T. minced garlic
4c. chicken broth ( I actually used 6 cups, or 3 cans)
1/2c. heavy cream ( I used 1 cup...I like it creamier)
8-10 red potatoes, cubed (1/4 inch)
3-4 leaves of kale (didn't have it, so I didn't add it...and it was fine)
Preheat large skillet on med-hi. Add sausage & crushed red pepper; cook till no longer pink. Break up large chunks, drain fat & discard. Set aside.
In saucepan, cook bacon, onion, & garlic till onion is clear. Add broth to skillet, heat till bubbling. Add potatoes to skillet. Cook until tender, approx 15 min. (I put the lid on for part of that, to help steam the potatoes). Reduce heat to simmer. Add heavy cream. Return drained sausage to skillet; cook 5 min. Add kale 5 min. before serving.
Add some homemade bread sticks to the side, and you have a yummy dinner!! If you try this, let me know how you like it! Unless you don't like it....then don't tell me. :)
